Udon with Tofu and Asian Greens
This is one of my all-time favorite soups that my hubby makes for us!   We always throw away the seasoning packet that comes with the noodles, as the sauteed spinach in the soy sauce is seasoned enough.  Be sure to put a big spoonful of vegan kimchi to the soup before serving!
