I made these stuffed bell peppers tonight so that Milt and I would have some healthy lunches this week. Here’s the recipe below!
Ingredients
4 (any color) bell peppers
2 cups cooked brown rice
1 can of black beans, rinsed
1 can of fire roasted diced tomatoes
1/2 diced onion
1/2 diced bell pepper
1/2 cup diced carrots
1/2 cup frozen corn
1 celery rib
Salt, garlic pepper, Cajun and Italian seasoning
Mozzarella and Parmesan cheese (omit the cheese for vegan stuffed peppers)
Heat your oven to 375 degrees. Cut bell peppers vertically and remove the insides. Saute the onion, diced bell pepper, and celery in a tablespoon of canola oil. Add the can of tomatoes, carrots, and corn, heat through. Add the cooked brown rice to the pan. Season to taste with salt, garlic pepper, Cajun seasoning, and Italian seasoning.
Put a small amount of water in the bottom of your 8 1/2 x 11 pan to keep the peppers moist during cooking. Stuff each of your peppers and position them in the pan stuffed side up, cover with foil. Cook for 35-40 minutes. Allow to cool for 5 minutes before serving.
Optional: Remove foil and sprinkle shredded mozzarella and parmesan cheese on top of each pepper.

If you are short on time and still want to eat something healthy, try this stuff:

Black beans, corn, and brown rice, no added anything. We used this in a burrito for a quick and healthy meal. Yes, it’s a little pricey and you could probably buy the ingredients separately for the same price and make more of it, but brown rice takes forever to make and this is a whole lot healthier than drive-up fast food joints.
One definition of motivation is ”the reason or reasons one has for acting or behaving in a particular way”. Last August I was motivated to eat better because I wanted to feel better, I wanted to be healthy for once in my life. When that feeling waned a bit, I became motivated to stop eating meat for the sake of the animals, to have as minimal impact on their suffering as I possibly could. Winter came and went and although I still ate relatively healthy food, I consumed more of it and I stopped moving. No exercise whatsoever. And my weight loss stopped too.
I’ve had a recurring dream for several years, one in which I’m running and it’s such a wonderful feeling. Running has obviously never been my strong point, even in high school when I could run. I want it to be my goal to run a 5k, hopefully this year, but I’m not sure if that’s possible. I have a long way to go, but I’ve got my motivation back once again and I’m hoping it sticks around for a while.

Hi, I’m Cheryl and I’m a cheese-a-holic. My husband and I switched over to vegetarianism August of 2011 for our health and to reduce our impact on the suffering of animals. As a result, we both lost 20 pounds each by eating a plant-based diet. Then I soon realized that vegetarians eat cheese, my most favorite food on earth, and my weight loss came to a screeching halt. I can’t blame the cheese entirely, actual exercise would probably start the weight loss back up again, which is why I’m starting this blog. To track my healthy living progress and see how many excuses I can come up with to not work out.
